Christmas Morning Monkey Bread

My stepmom wanted monkey bread on Christmas morning, but had forgotten to buy some frozen rolls to make it with. Monkey bread sounded good to me, but on Christmas morning, we didn't want to wait for dough to rise, so I pulled out a favorite recipe for quick cinnamon roll dough and came up with this. It was delicious, and pretty fast.

Quick Monkey Bread

Dough:
  • 2 3/4 c. all-purpose flour
  • 2 tbsp. sugar
  • 1 1/4 tsp. baking powder
  • 1/2 tsp. baking soda (or 1 tsp. baking powder, if you have no soda)
  • 3/4 tsp. salt
  • 1 1/4 c. buttermilk
  • 6 tbsp. melted butter
Preheat oven to 425. Spray inside of bundt pan with cooking spray. Stir together dry dough ingredients in a large mixing bowl. Combine buttermilk and 6T melted butter and stir into dry ingredients. Stir until combined. Dough will be very sticky.

Monkeyness
  • 1/4 c. butter, melted
  • 3/4 c. brown sugar
  • 1/4 c. granulated sugar
  • 2 t. cinnamon
  • 1/2 t. nutmeg
In another small bowl, combine sugars, cinnamon and nutmeg. Form dough into 1 inch balls, dip in melted butter and roll in sugar mixture. Stack balls in prepared bundt pan. Bake for 20-25 minutes, or until bread is golden brown. Cool in pan for a few minutes, then invert on serving plate.

Glaze
  • 3 T. cream cheese, softened
  • 3 T. buttermilk
  • 1 1/2 c. powdered sugar
Whisk together cream cheese and buttermilk, then mix in powdered sugar. Spoon over bread, dive in, and slip into sugar coma.
